1 yellow cake mix
1 1/2 cups water
1 box vanilla pudding (4 serving size)
4 eggs
1/2 cup oil
2 cups shredded coconut
1 cup chopped walnuts

Cream Cheese Frosting
4 tablespoons butter
1 8oz. package cream cheese
2 1/4 cups coconut
2 tablespoons milk
3 1/2 cups confectioner sugar
1/2 teaspoon vanilla extract

Directions:
Directions:
Blend cake mix, pudding, water, oil and eggs, beat well on medium speed for about 4 minutes.
Stir in coconut and nuts, pour into 3, 9" cake pans (greased and floured) bake at 350º for 30-35 minutes. Cool on cooling racks until cool to touch. Remove cakes from pans then frost.

Melt 2 tablespoons butter in skillet; add 2 cups of coconut stirring constantly over low heat until brown. Spread on paper towel to cool and drain. Blend 2 tablespoons butter (I like to use 4 tablespoons of butter) with the cream cheese, add milk and sugar alternately. Beat well add vanilla, stir in 1/4 cup of coconut. Frost all 3 layers, top and sides of cake. Then gently pat on the browned coconut all over cake. Store in refrigerator…yummy…enjoy…
