1 15 oz. can diced tomatoes (San Marzano)
2 T butter
Olive oil
1/2 small onion, peeled
2 garlic cloves, minced
2 bay leaves
2 T Basil leaves, sliced (or more)
Salt
Pepper
1 T sugar (optional)
Parmigiano cheese, grated

1 lb. pasta

Directions:
Directions:
Melt butter over medium heat and add oil in a large sauce pan.

Add garlic and saute for 1 minute. (don't let it brown)

Add diced tomatoes, bay leaves and onion and simmer uncovered over low heat for 50 minutes. You want it to bubble just a little bit.

Add basil and sugar (if using) and cook for 10 minutes more. (This is when I add the pasta to the boiling water.)

Add salt and pepper to taste.

Remove bay leaves and onion (some people eat the onion on the side).

Sever over pasta and add grated parmigiano to taste.

This is an adaptation of Marcella Hazan's very simple and great recipe. I use this as the base for other sauces, including Arrabiata (angry feathers) by adding 1 tsp. red pepper flakes (mild), chopped Italian parsley and parmigiano.
