2 1/2 pounds new potatoes
1/4 cup oil, from sun dried tomatoes
6 Tbsp veg oil
6 Tbsp white wine vinegar
2 tsp Dijon mustard
2 garlic cloves, crushed
1 tsp salt
pinch pepper
1 cup thinly sliced celery
1/4 cup fresh basil, chopped
2/3 cup green onions, thinly sliced
1/4 cup sun dried tomatoes, chopped, packed in oil

Directions:
Directions:
Scrub potatoes. Boil in salted water until just tender; drain and let cool. Meanwhile, prepare dressing. Place the oils, vinegar, mustard, garlic, salt and pepper in small bowl. Whisk until blended.

Peel and cut potatoes into 1/2 inch cubes. Place in large bowl and add half the dressing, mix lightly. Add veggies and remaining dressing. Cover and chill if making ahead, then bring to room temperature to serve.
