1/2 cup flaked coconut
1/2 cup brown sugar, firmly packed
2 tbsp. flour
3 tbsp. melted butter
1/8 tsp. nutmeg

Muffins:
2 cups flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/3 cup sugar
1 egg
3/4 cup milk
3 tbsp. melted butter
1 tbsp. grated lemon rind
1/4 cup fresh lemon juice

Directions:
Topping: In a small bowl, mix topping ingredients by hand until crumbly; set aside.
Muffins: In a large bowl, mix flour, baking powder, salt, nutmeg and sugar; blend well. In another bowl, beat egg lightly with milk, butter, lemon rind and lemon juice until well-blended. Add this mixture to the dry ingredient mixture; stir until just combined. Gently scoop the batter 1/2 full into 24 paper-lined muffin pans. Top each one with crumb mixture. Bake in a preheated 375º oven for 10 to 15 minutes or until center is done.

These lemony muffins taste more like a cupcake than muffin. They were a copycat recipe from a bakery in New York and after eating them, I can see why they were copied!
