Ingredients:  
Sauté Broccoli stems of 1 bunch of broccoli with 1 small diced onion in 2 tbls. Butter,
Add broccoli florets (tops) until soft .
Put in blender add 1 tbls sherry and 2 dashes of Tabasco.
Add 1/4 cup of heavy cream , 1 cup of sharp Chedder cheese and 1 handful of fresh spinach
Blend until smooth
Pour into bowls and top with croutons
