CHICKEN RUB:
2 T. light brown sugar
3 tsp. kosher salt
1/4 tsp. black pepper
1 tsp. Cajun seasoning
2 tsp. paprika
1/2 tsp. garlic powder
1 tsp. onion powder
1 tsp. herbes de Provence herb blend
(rosemary, marjoram, thyme, savory)

CHICKEN:
1 (4 to 5 lb.) whole chicken
1/2 c. water

Directions:
Directions:
Combine ingredients for Rub; set aside.
Remove neck and giblets from chicken; discard. Season chicken on all sides with Rub, and let rest 15 Min. (See note at end of directions.)
Add water to cooker. Fold a long strip of aluminum foil into thirds lengthwise to create a lift for chicken when it is cooked. Place foil in cooker; put chicken on top, cover, and cook on LOW 7 hours, or HIGH 3-4 hours, or until internal temperature reads 175º

Note: For added flavor, season chicken with Rub the night before, and refrigerate overnight.
