˝ cup carrot, finely chopped
˝ cup celery, finely chopped
˝ cup onion, finely chopped
˝ cup butter
⅓ cup flour
4 cup hot chicken broth
2 cups warm milk
3 cup grated cheddar cheese
salt and pepper to taste
chopped parsley (fresh if you have it on hand)
2 tablespoons Dry Sherry (optional)

Directions:
In a large saucepan, sauté the carrots, celery, and onions in butter until tender, but not brown, about 10 minutes. Whisk in flour. Cook 2 minutes, stirring constantly. Add the hot broth slowly, beating vigorously to avoid lumping. Blend in the warm milk. Stir with a spoon until mixture thickens. Add cheese. Lower heat and simmer, stirring constantly until cheese is melted. Taste for salt and pepper. Serve topped with chopped parsley or cayenne pepper.
