1 medium onion, chopped
2 celery ribs, diced
2 carrots, diced
1/2 cup butter
1/2 cup flour
4 1/2cups chicken broth
2 cups cooked wild rice*
2 cups half & half
2 cups turkey or chicken, diced
1 tsp. parsley flakes
1/2 tsp. salt
1/4 tsp. pepper

Directions:
In Dutch oven sauté onions, celery and carrots in butter until onions are transparent. On low heat, blend in flour and cook until bubbly. Gradually add broth stirring constantly. Raise to medium heat. Bring to a boil; boil 1 minute. Reduce heat. Add rice, half & half, turkey, parsley, salt and pepper. Simmer 20 minutes.
*For the wild rice, I use 1/2 cup wild rice in 4 cups cold water and 1 tsp. salt. Bring to a boil. Reduce heat, cover and boil for 30 minutes. Turn off heat and let the rice sit on the burner for 30 minutes longer. Drain before adding to soup.

Make ahead and freeze! Follow instructions, but do not add
half & half. Heat soup and then add half & half.
