1 white cake mix
6-8 T green crème de menthe (I have used clear crème de menthe and added pink food coloring at Christmas.)
1 jar of hot fudge ice cream topping
1 large container of Cool Whip

Directions:
Directions:
Make the cake batter per box directions. Add 4 T green crème de menthe to the batter. Bake cake as directed on box. Allow to cool. Spread the hot fudge topping over the cooled cake. Be generous. Fold 3-4 T crème de menthe into the cool whip. Spread over the cake. Keep the cake refrigerated. Garnishing with chocolate curls or crème de menthe candies is fun.

Years ago, a co-worker/friend, Irene, made this cake and brought it to work to share. It was so yummy and refreshing. I got the recipe from her. She never made the cake for us again, but I continually made it for my co-workers and family. Over time it became known as "Gayle's grasshopper cake". I actually forgot that this recipe came from my friend. One day I brought in a grasshopper cake. Irene had retired, but she stopped into the sheriff's office and heard someone refer to the cake as "Gayle's grasshopper cake". She was all over me. "What do you mean YOUR grasshopper cake?!? I gave you this recipe!" I was sooooooo embarrassed. Everyone still calls it Gayle's grasshopper cake though.
