Cook enough white rice for 4 servings
3-4 stalks chopped celery
1/2 onion chopped
1 can cream of celery soup
1/2 cup milk
1 lb ground beef browned

Directions:
Directions:
Cook the white rice and set aside. Brown the beef with the chopped onions and celery in a skillet, salt and pepper to taste. In a small bowl whip the milk and cream of celery soup together until smooth. Stir the rice, beef with onion and celery and soup mixture together in a bowl until evenly combined. Pour into a casserole dish and bake covered at 350 degrees for 30 minutes.

I didn't know what a casserole was until I moved to Iowa. Mom regularly made "hotdish" for dinner. It was a hit all around. She never called it anything but "hotdish" which worked because it was the only casserole she ever made. Rick wasn't a fan of mixing food together, but he really liked the only thing I ever learned to cook from my mom, hotdish. Our girls loved it, and now our grandchildren love it.
