2 broiler-fryers cut up or use favorite parts to make about 8 lbs. of chicken
1/2 cup butter
1 medium-sized onion, finely chopped (3/4 cup)
1 can (10 oz) condensed cream of mushrroom soup, undiluted
1 can condensed cream of celery soup, undiluted
1 cup dry sherry
2 T. chopped parsley
2 tsp. salt
2 tsp. paprika
2 tsp. white pepper
1/2 tsp. thyme
1/4 tsp. EACH of tarragon, crushed rosemary, basil
1/2 lemon, thinly sliced
1 lb. fresh sliced mushrooms or 1 can mushrooms

Brown chicken pieces slowly in butter. Remove chickenfrom skillet and place in large 13x9x2 inch baking dish

Remove all but 2 Tblsp. of pan drippings. Saute onions in the drippings until tender but not brown.Stir in soups, sherry, seasonings, and lemon slices. Blend thoroughly and pour miture over chicken. Bake, uncovered in a 350º oven about an hour or until chicken is fork tender. dd mushrooms and continure baking 10 minutes longer.
