10 cups chopped zucchini
4 large onions
4 green bell peppers
4 red bell peppers
1/2 cup salt
2 1/2 cups white vinegar
4 cups white sugar
2 tablespoons corn starch
1 teaspoon ground nutmeg
1 teaspoon tumeric

Directions:
Directions:
Wash and peel and remove seeds of zucchini -- chop fine
peal and chop onions and peppers
put chopped veggies in large pot with salt, let soak for a day
Next day, drain and rinse and drain again, try to squeeze out remaining liquid
Pout veggies in a pot
Mix in cornstarch with sugar and other 4 dry ingredients and add to cold vinegar and blend well
Put cornstarch, sugar etc into pot and over medium heat bring to a boil, stir well to prevent burning
When sugar melts and the syrup is clear, add the vegetables and simmer for about 30 minutes, stirring often
Pour mixture into hot jars, leave 1/2 of headroom
Process for 10 minutes in a 185 water bath
