2 cups strawberries, hulled and cut into quarters
1 cup blueberries
1 cup raspberries
1/2 cup heavy cream
2 tbsp. powdered sugar
1 tsp. vanilla extract
8 oz. cream cheese, softened
Directions:
Directions:
Prepare berries and lay them on paper towels to dry. In a medium tall bowl, using an electric mixer, whip cream, powdered sugar and vanilla until fluffy; set aside. In another bowl, beat softened cream cheese until it becomes smooth. Slowly add the whipped cream mixture until well-blended. Combine berries in a large bowl. Gently fold in cheesecake mixture until completely combined. Spoon into parfait glasses and chill for about 2 hours. You may top with additional sweetened whipped cream.

This dessert is perfect for the summer months. Mom would often make it and just scoop it into a nice large bowl, letting people serve themselves. Unfortunately, some people (I won't mention names) ended up eating half the bowl before others had a chance to taste it. So I guess if you snooze, you lose!
