3 Tbsp. snipped dried apricots
½ cup butter or margarine, slightly softened
2 tsp. sugar
1 ½ tsp. grated fresh ginger or ½ tsp. ground ginger

Directions:
Directions:
Place snipped dried apricots in a small bowl. Pour boiling water over to cover. Let stand 5 minutes. Drain well. In a small mixing bowl combine softened butter or margarine, sugar, drained apricots, and ginger. Beat until light and fluffy. Cover and chill until mixture begins to firm up, stirring once or twice. Serve immediately or store, covered, for up to 1 week in refrigerator.
