1 1/2 lbs chicken breast, choppped or cooked rotisserie chicken, deboned
1 onion, choppped
1 tsp garlic, minced
4 T butter
1/3+ C flour
6 C canned fat free chicken broth
1 1/2 -2 C jar salsa (505 brand is best)
1 tsp chili powder
1 tsp ground cumin
2 T lime juice
1 (16 oz) bag frozen corn
1 (14.5 oz) can diced tomatoes
cayenne pepper to taste (about 1/4 tsp)
avocado
sour cream
cheddar or Monterrey jack cheese
tortilla chips

Directions:

1. In large nonstick pot coated with cooking spray, cook chicken over medium heat, stirring constantly until lightly browned. Add onion, garlic, and butter and continue sauteing until tender. Add flour to combine until butter is soaked up by flour. Add chicken broth, salsa, chili powder, cumin, and lime juice. Bring to boil. Reduce heat and cook 10 minutes and then add corn and tomatoes.

Serve with tortilla chips, chopped avocado, and cheese.
