1 1/2 C flour
1/4 C brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 C banana nut crisp cereal
1/2 C sour cream
1/2 C frozen apple juice concentrate, thawed
1/3 C vegetable oil
1 egg
1/2 C mashed banana (about 1 large)

Directions:
Directions:
1. Heat oven to 400ºF and spray muffin pan cups with cooking spray or use baking cups.
2. In small mixing bowl, combine flour, brown sugar, baking powder and soda, nutmeg and salt. Set aside.
3. In large mixing bowl, combine cereal, sour cream and apple juice. Let stand for 5 minutes or until cereal is softened. Add oil, egg and mashed banana. Beat well, add dry ingredients until combined. Divide evenly in muffin cups
4. Bake 20 minutes or until muffins test done with toothpick. Immediately remove from pan. serve warm.
