1 1/2 c. unbleached white flour
3/4 c. flax seed meal
3/4 c. oat bran
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 c. shredded carrots
2 apples, peeled and shredded
1/2 c. raisins (optional)
1 c. chopped nuts
3/4 c. milk
2 beaten eggs
1 tsp. vanilla

Directions:
Directions:
Mix first 8 dry ingredients in a large bowl. Stir in remaining ingredients just until moist. Do not over mix. Fill 15 muffin cups 3/4 full. Bake in a 350º oven for 15-20 minutes.
