1 c. grated sharp cheddar cheese (regular grated - not the finely grated)
1 lb. (16 oz.) original or mild pork sausage
1 lb. (16 oz.) spicy/hot pork sausage (or stick to mild, if preferred)
2 1/2 - 3 c. Bisquick Baking Mix

Directions:

Preheat oven to 400º

Mix sausages together until well blended, then add in the grated SHARP cheddar cheese. Add the Bisquick about a 1/2 cup at a time until blended well. Shape into 1 inch diameter balls. Place on baking sheet covered with aluminum foil sprayed with non-stick spray and bake at 400º until meat is no longer pink and cheese is lightly brown, about 20 minutes.

Serve alone or with your favorite dipping sauce or hot mustard.

This recipe might also be good with other types of flavored sausages, like sage flavored, etc. It has to have a little spice to it or they would be too bland. Spices could also be added to change up the recipe, like garlic, onion, paprika, etc.
