2 lb. lean ground beef
2 cups oatmeal (I like Quaker "quick" oats, but their "old fashioned" oats work just as well. The quick oats just give it a slightly finer texture)
3 eggs
4 cloves of garlic (minced or put through garlic press)
1 tblsp. Italian seasoning mix (or just use some basil and a small amount of oregano)
1-2 Tblsp. Worcestershire sauce
2 tsp. salt
Lots of freshly ground pepper
About 1/4 cup pure maple syrup (NOT Aunt Jemima or Mrs. Butterworth - type pancake syrup!)

Preheat oven to 350 degrees. Place all ingredients EXCEPT maple syrup in a large bowl. Use hands to knead together until all ingredients are evenly distributed. In 9x13 pan, form meat into a long loaf. Place in oven and cook for 1/2 hour.

After 1/2 hour, brush meatloaf with maple syrup. Return to oven for 15 min. After 15 minutes, again brush meatloaf with remainder of maple syrup. Return to oven for about 10 -15 more minutes. By this time, syrup should have caramelized. Remove from oven and allow to sit for about 10 minutes, at room temperature, before serving.
