1 box of butter recipe yellow cake mix
1/3 c. vegetable oil
3 tbsp. water
3 large eggs
1 can (15 oz.) mandarin orange slices with juice.
Filling (Frosting):
12 oz. whipped topping (Cool Whip)
1 large box vanilla instant pudding
1 can crushed pineapple with juice

Directions:
Directions:
Preheat oven to 350º. MIx together cake mix, oil, water, eggs. Add the oranges with the juice. Place batter, divided evenly as possible, into three greased and floured round pans. (I use non-stick spray and then add the flour -- shake pan till four is all over pan, and turn pan upside down and pat pan to empty out excess flour.)

Bake 23- 25 minutes, or until each cake springs back when touched. Let cool in pan a couple of minutes then turn upside down onto cooling rack.

Mix filling ingredients together by hand and spread between the completely cooled layers and on top and sides of the cake. Keep refrigerated.

You can use a 9x13 pan and put all frosting on top, but it makes a beautiful tall round cake in the round cake pans. Chopped nuts can be sprinkled on top or added to the filling, if desired.
