1 1/2 pounds (5cups) yellow onions thinly sliced
3tbsp butter
1 tbsp. oil
1 tsp salt
1/4 tsp sugar
3 tbsp. flour
3 qt beef stock
1/2 c dry white wine or dry vermouth
3 tbsp. cognac
French bread 1 to 2 c grated Parmesan or mozzarella cheese

Cook onions in 4qt covered pan slowly in butter and oil for 15 min. Uncover raise heat to med. Stir in salt and sugar cook for 30 to 40 min stirring frequently until onions are deep brown. Sprinkle with flour, cook and stir 3 min. Remove from heat.
Boil stock in another pan. Stir into onions. Blend in wine and season to taste. Simmer, partially covered for 30-40 min. Add cognac pour into crocks add bread add slice of mozzarella and broil to melt.. or sprinkle with parmesan cheese.
