Ingredients:  
2 cups dried brown or green lentils
8 cups of water
4 cups of vegetable Broth
1/2 cup chopped onions
1/2 cup chopped celery
1/4 cup chopped carrots
1 clove garlic, minced
2 ½ tsp salt
1/4 tsp pepper
1/2 tsp oregano
14.5 oz can of chopped tomatoes (I use Aylmer’s Spicy Red Pepper Tomatoes)
2 Tbsp wine vinegar

Directions:
Directions:
Put all ingredients except tomatoes and wine vinegar into slow cooker. Cook on low for 8-10 hours. Add tomatoes and wine vinegar. Cook on high for 15 minutes.
