3/4 c. milk
2 tbsp. white vinegar
1 c. all purpose flour
2 tbsp. white sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
2 tbsp. butter, melted
Non-stick cooking spray

Directions:
Combine milk with vinegar and set aside for 5 minutes to allow it to "sour."

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into the "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet or griddle over medium heat, coat with cooking spray. Pour 1/4 capfuls of batter onto the skillet, and cook until bubbles appear over the surface of the pancake and the edges appear done. Flip each pancake using a wide spatula, cook until browned on the other side. Serve warm with a pat of butter and warm maple (or other flavor) syrup or top with strawberries and whipped cream. Yummy

This recipe serves 4, double it to serve 8.
Note: Lemon juice can also be used to "sour" the milk. Or real buttermilk can be substituted for the vinegar and milk.
