1 c. green beans
1 c. carrots, sliced
1 each color bell pepper, orange, yellow, red, sliced 2" pieces
1 small pack cherry tomatoes
2 yellow onions, coarsely chopped
2 celery stalks w/leaves, chopped bite size pieces
2 zucchini yellow or green, sliced into discs
2 bay leaves
4 small red potatoes, quartered
* 1 egg plant, cut length wise (*salted w/2 tbsp. salt, let sit for 3 hours)
Rinse well, cut into small pieces.
3 garlic cloves, cut in half
1/2 c.olive oil

Directions:

Preheat oven 350º
Heat 3 tbsp. olive oil in a sauce pan and sauté the onions until translucent. Add the garlic and sauté, about a minute, add all the vegetables to the pot.
Stir well to cover vegetables with olive oil.
Remove vegetables to a large rectangle baking dish.
Sprinkle vegetables with salt & pepper.
Bake @ 350º for 1 hour or until tender.
