1 Bags of Yiyantes Beans (17oz. 3 alpha beans)
6 cups (water to cover beans in pot)
2 large yellow onions, pureed
1 large can of crushed plum tomatoes w/basil (28 oz.)
3 c. beef broth
4 garlic cloves, finely chopped
11/2 c. olive oil
1 c. chopped celery
11⁄2 c. sliced carrots
salt and pepper to taste

Soak the beans in water over night.
Change the water in pot.
Put beans to boil in a heavy pot with a beef broth and enough water to cover beans for 2 hours or until soft. (keep checking bean's water level, add water if necessary).
Sauté the pureed onion in 2 tbsp. olive oil until translucent, add the can of tomatoes, celery, carrots, salt and pepper to taste. Cook for 5 minutes, add all this to the beans.

In a Preheated 400 degree oven, bake beans in a covered pot for 1 hour or until tender, making sure there is another water to cover beans.

Before serving, add the garlic cloves that have been finely minced and mixed with the oil.
