1 Sweet Potato
2 tsp. Butter
2 Tbsp. Brown Sugar
1/4 c. Marshmallow

Directions:
Directions:
Bake your potato at 350º wrapped in foil for 45 min or until you can easily stick a fork in it. Then slice the Sweet Potato in half, then put several knife cuts (not all the way through) in each half, melt 2 tsp butter and cover each half, sprinkle brown sugar over each half (roughly 1 T. per half), finally put 1/8 c. Marshmallow on each half of the Sweet Potato now put back in oven and cook or broil until Marshmallows are melted and browned.

Mom made these whenever we had ham, not everyone liked them when we were kids but many of us have come to enjoy them later in life. One would think we would have loved them with the marshmallows on top! :)
