8 oz sliced baby Portobello mushrooms
2 garlic cloves, minced
6 oz pkg fresh baby spinach
1/4 tsp salt
1/4 tsp pepper
2 Tbsp olive oil
1/4 cup toasted pine nuts
1/2 cup crumbled feta cheese
2 Tbsp balsamic glaze
6 baked potatoes, halved

Directions:
Directions:
Cook the mushrooms, garlic and spinach in hot olive oil in a large skillet, stirring often, for 5 minutes.
Season with salt and pepper.
Stir in the pine nuts, feta and balsamic glaze.
Spoon over the potatoes and serve.
