1 cup uncooked rice (prepare according to microwave rice recipe)
6 eggs
1/4 teaspoon salt
1 - 8 oz. bacon cooked
1 tablespoon soy sauce
1 chopped green pepper
1/2 cup onion chopped
cooking oil

Directions:

1. Prepare rice ahead and chill the night before
(1 cup rice, 2 cups hot water, 1 teaspoon oil)
Microwave on high covered 5 minutes, reduce setting to 5 and cook another 10 minutes.

2. Beat eggs and salt. In fry pan, scramble eggs to small pieces (set aside). In oil, at a lower heat, stir in onion, cooking with green pepper for a couple minutes, then add rice, crumbled bacon, eggs, and soy sauce. Heat through combining all ingredients.
