1 lb ground beef
1 small onion, peeled and diced
1 can of either vegetable beef soup or vegetarian vegetable soup
Salt and pepper

Brown the ground beef and onion in skillet, drain off all but 1 tbsp of fat. Add the soup and enough water to prevent mixture sticking. Heat through and serve hot. Serves 3-4.

We used to make this when I was in Girl Scouts; it was quick, easy and pretty tasty, at least by early 1960 standards. I remember using either Campbell’s Vegetable Beef soup or Campbell’s Vegetarian Vegetable soup which had the little macaroni alphabet noodles. It was fun to find the letters that spelled our names. Maybe fun for kids today, too. And you don’t even need a campfire to make it.
