2 large potatoes, cooked and finely mashed - about 3 c.
I small carrot, grated
1/4 c. grated onion
2 tbsp. butter
2 tbsp. flour
1/2 tsp. dried dill weed
1 pt. half & half
1 1/2 to 2 c. chicken stock

Directions:
Directions:
Ni a large pan melt butter, add flour and blend well. Cook for a few minutes. Add grated onion, carrots, dill weed and about 1 cup of the chicken stock. Let simmer to thicken and cook the vegetables, about 15 to 20 minutes Add more chicken stock as needed. Add the half & half at once and then stir in mashed potatoes. Adjust for seasonings.
