3 eggs
1 c. 2 percent milk
1/2 c. whipping cream
1 tbsp. butter
1/2 tsp. grated orange peel
1/2 c. sugar
3/4 c. plus 3 tbsp. grated unsweetened coconut, divided
1- 9 in. pie shell, unbaked

Directions:
Directions:
Preheat oven to 400º.
On medium speed of electric mixer, beat eggs. Add milk and cream; beat to blend. Add butter, orange peel, sugar and 3/4 c. coconut, mixing until blended. Pour into pie shell and sprinkle with remaining 3 tbsp. coconut. Bake for 30 to 35 minutes or until custard is well set. Cool before serving.
