1 ½ c. self-rising flour
2 c. unbleached all-purpose flour
1 c. unsalted butter, room temp
2 ½ c. granulated sugar
4 fresh large eggs
5 Tbsp. fresh lime juice
1 Tbsp. lime peel, finely grated
1 ½ c. buttermilk

Cream cheese frosting:
16 oz. cream cheese, room temp
3 c. powdered sugar
1 c. unsalted butter, room temp
1 tsp. pure vanilla extract
2 drops green food coloring
Decorative edible candy confetti, for garnish

Directions:
Preheat oven to 350º F. Line muffin tins with paper or foil liners.
In medium bowl, whisk both flours together. In separate large bowl, using an electric mixer on medium-high speed, beat butter until smooth. Add sugar, beating until light and fluffy. Beat in 1 egg at a time; add lime juice and lime peel. Beat in flour and buttermilk in three batches, alternating between the two.
Divide batter evenly among lined tins, filling each cup one-half full. Bake for 20 – 25 minutes or until a cake tester inserted in the middle comes out clean. Rotate tins halfway through the baking process to promote even baking. Cool for 10 minutes in pan. Remove cupcakes from pan and transfer onto wire racks to cool completely before frosting.
For Frosting:
Beat first 5 ingredients in a medium bowl until smooth and creamy.
Using a small offset spatula, spread frosting over the top of each cupcake. Decorate with candy confetti.
