1 egg yolk
6 oz. white chocolate, coarsely chopped
1 c. whipping cream
1 tsp. unflavored gelatin
1 Tbsp. light rum
1 Tbsp. white crème de cacao
Sprigs of mint

Directions:
Beat egg and egg yolk in a large bowl at high speed of an electric mixer until thick and lemon colored. Place white chocolate in top of the double boiler; bring water to a boil. Reduce heat to low; cook, stirring constantly, until chocolate melts. Gradually add 1/4 of melted chocolate to egg mixture; add to remaining hot mixture, stirring constantly. Cook 1 minute, stirring constantly. Pour mixture into large bowl. Set aside until cooled.

Beat 1 c. whipping cream at medium speed of electric mixer until soft peaks form. Set aside.

Sprinkle gelatin over rum and crème de cacao in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves. Gradually add gelatin mixture, a few drops at a time, to chocolate mixture, beating until smooth.

Gently fold half of white chocolate mixture into whipped cream; add to remaining white chocolate, gently folding until combined. Spoon mixture into individual dessert dishes; chill at least 3 hours or until serving time. If desired, garnish with mint sprigs and chocolate curls.
