10lbs of Potatoes
1/4 lb of diced salami
1 mozzarella diced
1 cup Parmesan cheese
6 or 7 eggs

Directions:
Directions:
Boil potatoes in their skins (after scrubbing) in about one inch of water until tender. Peel and whip adding 1 stick of butter and 1/2 cup of milk (more if dry)
mix well with hands - salami/ mozzarella/Parmesan/ eggs
place in buttered loaf pan with with grated cheese and bread crumbs dot with butter.
bake at 400º for 20 to 25 min

Ralphie grew red potatoes in the backyard. He use to ask the grandkids to dig them out when he was going to make his potato cake. It really was delicious. My mom would have quite the mess to pick up when he was done but it was really well worth the work!
