3 tbsp soft butter
1 cup sugar
2 eggs
1 tbsp orange rind, grated
1 can whole berry cranberry sauce (16 oz)
1 1/2 cups whole wheat flour
1 1/2 cups white flour
1 tsp baking soda
2 tsp baking powder
1 1/2 cups zucchini, coarsely grated
1 cup walnuts, coarsely chopped

Directions:
Directions:
Heat oven to 350°F
Beat butter, sugar and eggs till fluffy. Stir in zuccini, orange rind and cranberry sauce. Measure flours, soda and baking powder into butter mixture and mix until blended.
Fold walnuts into cake batter.
Place into greased pans. Bake. Cool.

9" loaf pan bake 1 1/2 hrs
8" loaf pan bake 1 hr
