ricotta cheese

Line muffin tins with three wonton wrappers ea. so that the entire cup is covered. Mix 1 cup ricotta cheese with 1 egg and salt and pepper. Spoon mixture into the bottom of each muffin cup. Fill the muffin cup approximately 1/3 full. (Continued next page.)

Next, brown 1 lb. ground beef and add a jar of pasta sauce. Spoon hamburger mixture on top of ricotta cheese layer. This layer should fill the muffin cup about 3/4 from top.

Top with grated mozzarella and cheddar cheese. Loosely lay a sheet of tin foil across the top of the pan to prevent wonton wrappers from burning and bake in 350º oven for 15 - 20 min. (Remove the tin foil for the last 5 min. so the wrappers can brown) Remove from oven and garnish with fresh chopped basil.
