Ingredients: Crust: 1 1/2 c. chocolate wafer crumbs 1 c. slivered almonds, chopped 1/3 c. sugar 6 Tbsp. butter, room temperature
Filling: 16 oz. cream cheese, softened 1/4 c. sugar 9 oz. white chocolate, melted and cooled to room temperature 3 large eggs, room temperature 1/4 c. heavy cream 1 tsp. almond extract 1 tsp. vanilla extract pinch of salt
Topping (optional): 2 c. sour cream 1 tsp. vanilla 1 Tbsp. sugar

Directions:For crust: Combine ingredients in a food processor or mixer until crumbly. Pat crumb mixture onto bottom and side of buttered 10-inch springform pan.
Preheat oven to 350º F.
For filling: Beat cream cheese in large bowl with an electric mixer until light and fluffy. Gradually beat in sugar. Add white chocolate and beat just until blended. Beat in eggs, cream, almond, vanilla, and salt. Pour into crust and bake at 350º F for about 45 minutes, until set and beginning to brown on top.
For topping: Mix ingredients and spread over cake. Bake for 5 minutes. This can be done a few minutes after the cake bakes or at a later time.
Chill over night before serving. |
