2 cans tuna (small or 1 large), drained
1 cup frozen peas, microwave for two minutes, drain
1 cup iceberg lettuce, finely shredded and lightly packed
3/4 cup fresh tarragon mayonnaise & 1/2 lime, juiced
Tomato wedges and avocado slices
Tortilla baskets** or purchase already made

Combine all ingredients (except garnish) in a large bowl. toss gently and refrigerate until cold.

*Herb mayonnaise:
1 jar mayonnaise 30-32 oz.
1 bunch (1 1/2-2 cups loosely packed, FRESH herbs (tarragon for this recipe, mint, dill, basil, or your favorite herb)
1/4 cup white wine
Scoop mayonnaise into large bowl. Put herbs in blender, chop coarsely. Add wine and blend. Fold mixture into mayonnaise and put back into the mayo jar. Refrigerate.

**Tortilla baskets:
6" - 8" flour tortillas, room temperature
2+ cups vegetable oil
Heat oil in heavy skillet. Place tortillas in basket form (Purchase on Amazon). Fry until golden brown. Remove and place upside down on a paper towel to drain. Let cool completely and fill with the tuna salad mixture. Garnish with tomato and avocado in pinwheel fashion in the center of the salad. You can add a green olive in the middle for a flower effect.
