9" double crust pie pastry
3/4 to 1 cup sugar
3 T. all-purpose flour
1/4 c. tapioca
1/4 tsp. ground nutmeg or cinnamon, and dash of salt
5 c. sliced fresh peaches
2 T. Butter

Directions:
Directions:
Combine sugar, flour, tapioca, nutmeg, cinnamon & dash of salt. Add to peaches; mix. Line 9" pie place with pastry; fill. Dot with 2 T. butter. (Dash with extra spice if desired). Adjust top crust, cutting slits for escape of steam; seal. Bake in hot oven (400º) for 45-50 minutes or until done. Serve warm with whipped cream or ice cream.
