8-10 tart apples or 6 C. sliced
1 c. sugar
2 T. flour
1/2 to 1 tsp. cinnamon
dash ground nutmeg
2 T. tapioca
2 T. butter
Pastry for 2-crust 9" pie

Directions:
Directions:
Pare, core and thinly slice apples. If apples lack tartness sprinkle with a squirt of lemon juice.

Combine sugar, flour, spices, tapioca & dash of salt; mix with apples. Line 9" pie plate with pastry. Fill with apple mixture; dot with butter. Adjust top crust, cutting slits for escape of steam; seal. Coat with cream or milk and sprinkle with sugar, cinnamon and nutmeg. Bake at 400º for 50 minutes or until done. Fruit pies are not done until "caramelized goo" oozes from the crust!
