Use the full German Schnitzel recipe found in this cookbook, add on the following sauce
4 tablespoons butter
3 tablespoons flour
2 cups whole milk
2 teaspoons sweet paprika
1 1/2 - 2 beef bouillon cubes, broken up
Pepper & Salt to taste
8 oz button mushrooms, sliced

1. Using the drippings of your schnitzel pan, melt the butter, then add the flour and whisk constantly for 3-4 minutes or until the mixture is a rich, caramel brown.
2. Add the milk, paprika, beef bouillon cubes, pepper, and continue to whisk until thoroughly blended. Bring the mixture to a simmer, continuing to whisk. Add the mushrooms and continue to simmer, stirring occasionally, for 3 minutes. Add more salt and pepper to taste.
3. Place schnitzel on individual plates and spoon the sauce over them. Serve immediately.
