4 eggs
2 c. sugar
1 1/2 c. Crisco oil
3 small jars baby food strained carrots
1 tsp. salt
2 tsp. soda
1 tsp. cinnamon
2 1/2 c. flour
1/2 c. nuts optional

Frosting:
3 1/2 c. powdered sugar
1/2 c. butter
1 8-oz. cream cheese
1/2 tsp. vanilla

Directions:
Directions:
Heat oven to 350. Grease and lightly flour a jelly roll pan. In large bowl, blend all cake ingredients together, except nuts, at low speed until moistened. Beat 3 minutes at high speed. Stir in nuts. Pour batter into pan. Bake at 350 for 30-40 minutes or until done. Cool. Beat frosting ingredients together until smooth.
