1/2 c. butter
3/4 c. flour
1 T. beef bouillon
1/4 c. onion, chopped
2 tsp. pepper, divided
2 1/4 c. milk
1 can chicken broth
1 lb. cooked sausage
2 eggs
12 oz. dry-curd cottage cheese
12 noodles, cooked
1 can sauerkraut, squeeze out liquid
2 c. shredded Monterey Jack cheese, divided

Preheat oven to 350. Grease 9x13 pan. Melt butter. Stir in flour, bouillon, onion and 1 tsp pepper until smooth. Stir in broth and milk. Boil 2 minutes or until thick. Add meat. Mix eggs, cottage cheese and remaining pepper. Spread 1 cup of meat mixture in greased pan. Layer (6 noodles on bottom layer) with 3 noodles, 1/3 of meat, half of cottage cheese and sauerkraut, and 3/4 cup Monterey Jack cheese. Repeat layers. Top with remaining noodles and meat mixture. Cover and bake at 350 for 90 minutes. Sprinkle with remaining cheese. Bake 5 minutes more or until cheese melts.
