5 Chicken breasts (butterflied & cut in half)
2 cups Flour
1/4lb Butter
1/3cup Lemon juice
1 jar brinned capers, rinsed
5 Tbsp Olive oil
1/2 cup white wine
1/3 cup Parsely
Salt & pepper to taste

Directions:
Directions:
Season chicken with salt & pepper, dredge chicken in flour. In large skillet over med high heat , melt 2 tbsp butter & 3 tbsp oil. When it starts to sizzle, add chicken and cook 3 min. When chicken is browned, flip and cook other side. Remove and transfer to plate. Melt 2 more Tbsp butter and 2 Tbsp oil, cook other 2 chicken breasts. Remove chicken.
Reduce heat to med low and add garlic &capers (crush them in pan). Brown garlic scraping brown bits from the pan for extra flavor. Add wine, lemon juice and butter. Return all chicken to pan and simmer for 5 min. Garnish with parsley. Salt & pepper to taste. ****measurements are subject to taste :)
