Ingredients: 1/4 c. onion 1/4 c. fresh Italian parsley 1 Tbsp. fresh cilantro 2 tsp. grated lemon zest 1 Tbsp. fresh lemon juice 1 Tbsp. green olives 2 tsp. capers, drained 1 clove garlic 1/8 tsp. freshly ground black pepper 2 Tbsp. olive oil 1 lb. halibut fillet cut into 4 portions

Directions:Place all ingredients in a food processor except oil and fish. Pulse several times to chop. Add oil and process, scraping sides several times until pesto-like paste forms. Spray baking dish with cooking spray. Place halibut in baking dish and pat with pesto. Cover and refrigerate 30 minutes. Heat oven to 450º F. Bake 15-20 minutes uncovered or until fish is opaque in center. Number of Servings: 4 |
