5 tbsp. olive oil
1 tbsp. butter
1 onion, chopped
1 tsp. sugar
1 tsp. minced garlic
28 oz. can diced tomatoes
1/2 cup white wine
1 tsp. basil
1 tsp. salt
1/2 tsp. dill weed
1 tbsp. grated Parmesan cheese
1 tsp. oregano
1 to 1 1/2 lbs. uncooked shrimp
pepper to taste
1/2 tsp. hot pepper flakes (optional)
2 cups hot cooked rice
1/2 lb. crumbled feta cheese

In a skillet, heat 3 tablespoons olive oil and butter; add chopped onion, sugar and garlic. Cook slowly, stirring well until caramelized; add the tomatoes. Then add wine, basil, salt, dill weed, Parmesan cheese and oregano. Simmer for 15 minutes. Peel and devein shrimp; sprinkle with salt and pepper. Heat the remaining 2 tablespoons of oil in a separate skillet; add the shrimp. Cook about one minute, until the shrimp turns pink; sprinkle with red pepper flakes. Spoon cooked rice into a greased 11x7-inch baking dish; add shrimp with any pan juices. Add tomato mixture; stir. Lastly add the feta cheese; stir again. Place in a preheated 400º oven for 10 minutes or until heated through.

This casserole is not only incredibly tasty, but very simple to put together. I often make everything the day before; the cooked rice, tomato sauce and shrimp. Then when I am ready to serve it, I put it together and throw it into the oven. Just add a Greek salad and an ice-cold beer for the perfect light summer dinner!
