1/2 cup margarine
1/2 cup sugar
1/2 cup brown sugar
1 unbeaten egg
1/3 cup peanut butter
1/2 tsp. soda
1/2 tsp. vanilla
1/4 tsp. salt
1 cup flour
1 cup quick rolled oats.
1 cup chocolate chips
For topping:
1/2 cup confectioners sugar
1/4 cup peanut butter
2-4 tbsp. evaporated milk

Directions:

Cream the margarine and sugars. Blend in the egg, peanut butter, soda, vanilla and salt .Stir in the flour and oats.
Spread in a greased 13" X " pan. Bake at 350 degrees for 25 minutes.
Remove from oven and immediately sprinkle top evenly with the chocolate chips. Place a cookie sheet over pan. Let set for 5 minutes, then spread the chocolate chips, (nicely melted by now), evenly over the top. Allow to cool to almost room temperature.
In the meantime, combine the confectioners sugar, peanut butter and milk in a small bowl and beat by hand until nice and smooth. You can drizzle this over top of cooled chocolate layer, or I usually just drop by spoonfulls, then use a knife to pull through the peanut butter mixture, creating the appearance of a marbled top.
Allow to cool completely, then cut into thin bars.

Always, always one of our Christmas Cookies. But also great to take to pot lucks, etc. These look so pretty arranged on a little rectangular plate, stacked about three layers high.
