2/3 cup chopped onions
2 tbsp. olive oil
2-10 oz. pkgs. frozen chopped spinach, thawed and drained well
3 eggs
12 oz. cream-style cottage cheese
1 cup crumbled feta cheese
1/2 tsp. dried dill weed
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Sauté onion in olive oil until tender. Add spinach and cook 5 minutes, stirring frequently. In a bowl, add the remainder of the ingredients; combine. Add the spinach mixture; mix well. Pour mixture into a greased 8-inch square pan. Bake in a preheated 350º oven for 25 to 30 minutes, or until set.

This recipe tastes like a spinach cheese pie, without the crust. You can also pour it into a premade pie crust and serve it as a quiche. It is simple to make and perfect for lunch with a fresh tomato salad!
