One graham cracker crust (store-bought is fine...yea!)

2 - 8oz. packages cream cheese (can use low fat)
2/3 cup sugar
3 eggs, well beaten
1 tsp. vanilla

Directions:
Directions:
Put the room temperature cream cheese and sugar into a bowl, and blend with mixer at low speed. Add eggs and vanilla and continue beating until smooth and creamy. Scrape sides of bowl often to make sure all ingredients are mixed in.
Pour mixture into the graham crust. Bake at 350 degrees for about 30 minutes or so.....till center seems firm. Place on rack to cool.
Great plain, but also nice with fresh strawberries or blueberries on top.

This pie is popular at the Inn at Honey Run near Millersburg, Ohio. So quick and easy. Try it, and you may never make a traditional cheesecake again.
