A quart and a half or so fresh strawberries, divided
3 tbsp. cornstarch shaken with 1/3 cup water
1 tsp. lemon juice
3/4 cup sugar
4 oz. cream cheese, softened
9" baked pie shell

Directions:
Take a half quart of berries and crush them in a pan. Mix in the lemon juice, sugar, and water/cornstarch mixture. Cook, stirring often until mixture comes to a boil. Let it continue to cook until it starts to thicken, (about 3-4 minutes). Remove from heat and allow to cool to almost room temp.
Meanwhile, spread the softened cream cheese over the bottom and a little up the sides of your baked and cooled pie shell. Arrange the remaining fresh berries as tightly as possible on top of the cream cheese, and slowly pour the cooled strawberry mixture over the fresh berries in the shell. Place in fridge until serving time, then top each slice with a generous dollop of whipped cream.

I remember our mother, Helen Davis, making this for our father, Wilber.....all those years ago. I make it for my husband today, as it is one of his favorites.
Note: you can also make a fresh peach pie using this very same recipe. Just make sure your peaches are ripe and sweet.
